Baked Turkey Tacos

I just love the new baked tacos shells that we find at the super market, they have come a long way from the taco shell that we had to fry then hang upside down on a rack. Another plus to these tacos, you can make a few or enough for a crowd. Just load them on a baking sheet pour in the filling and they are ready to bake. I am using left over Turkey today to make this awesome recipe. No matter how well we plan there is always a little left over turkey or chicken and what better way to make a left over come to life than a great Tex Mex Taco.

Bake The Taco's

Baked Turkey Tacos
Miz Helen's Kitchen
Serves 6 to 8
Ingredients
6 to 8 Baked Taco Shells
2 tablespoons vegetable oil
3 cups turkey breast, sliced in small strips
2-1/2 teaspoon chili powder
2-1/2 teaspoon cumin
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
1 ( 16 ounce) can refried beans
1 (10 ounce) can green chilies and tomatoes
1/2 cup water
4 cups Cheddar and Monterrey Jack cheese mix, shredded
Garnish
3 Roma tomatoes, chopped
3 cups lettuce, chopped
4 green onions, chopped
Directions
Slice the turkey breast and toss it in a hot skillet with the vegetable oil.
Add 1- 1/2 teaspoons chili powder, 1/2 teaspoon 1/2 teaspoon garlic powder,
1-1/2 teaspoon cumin, 1/2 teaspoon salt,1/2 teaspoon pepper, and cayenne pepper. Stir the seasons with the turkey until completely blended.
Add the green chilies and tomatoes then stir in 1/2 cup water. Cook on low for 5 minutes and then remove from the heat.
In a medium bowl mix together the refried beans, 1 teaspoon chili powder, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
Place the baked taco shells in a baking dish and place 2 to 3 tablespoons of the refried bean mixture into the bottom of the shells.
Next layer the turkey mixture on top of the refried bean mixture.
Next layer the cheese on top of the turkey mixture.
Bake the filled taco shells in a 400 degree oven for 12 minutes.
Remove the taco's from the oven and garnish with chopped lettuce, tomatoes and green onions.
Drizzle your favorite salsa over the taco and add more cheese if you like.
