Tuesday Tea Time With Cucumber Tea Sandwiches

Sometimes on Tuesday afternoon some of my friends will drop by and have tea with me. I really never know who will come for sure, it is a very informal tea, just some old friends stopping by to share a cup of tea and a little life. I always make a pot of tea and a few little sandwiches or cookies to enjoy with our tea. Today I have made some cucumber sandwiches to go with our tea, I have a very special spread recipe that I use for my cucumber sandwiches, they are delicious.

I enjoy my afternoon tea and have collected Tea Pots and Tea Cups For Over 30 years. Of course as with any collection I have my favorites and certain ones that I use for a certain season or event.

The cheerful green Tea Pot that I am using today is very utilitarian. 
I love the smooth surface of Tea Pot and it is so easy to use.

The feature that I love about this Tea Pot is the built in strainer. 
Just pack the tea in the little basket and pour in the hot water, 
then let it steep.

It Is Very Important To Dry The Cucumber's After Salting

Cucumber Sandwiches
Miz Helen's Kitchen
Ingredients
12 Sandwiches
24 slices of thin sandwich bread
1 (8 ounce) container cream cheese, room temperature
1/2 cup real mayonnaise with lemon
1/2 teaspoon salt for spread
2 teaspoon's dill weed, fresh or dried
1/2 teaspoon lemon juice
2 medium cucumber's, sliced
1 teaspoon salt for cucumbers
Fresh Dill Sprigs for garnish
Directions
In a small mixing bowl with an electric mixer, mix the cream cheese,mayonnaise and lemon juice until very smooth. 
Add the dill weed and mix well.
Refrigerate for 2 hours before using.
Slice the cucumbers and spread on a cookie sheet.
Salt the cucumbers and let stand for 1 hour to draw the extra moisture from the cucumbers.
Place the cucumbers in a towel and dry the cucumbers, before placing on the sandwiches.
Cut the crust from the bread.
Spread the cream cheese mixture on  each side of the sandwich.
Place the cucumber on top of the spread and place the other slice of bread on top.
Slice the sandwich in half and if you like in half again. You can also slice the sandwich in slim bars.
Garnish with a cucumber slice topped with a fresh sprig of dill.
If you have any of the spread left, it can be used for a vegetable dip, it is delicious.

  2. So very Lovely! Mom grandma throws a fun tea party for my sister each year! The girls dress up in gaudy over the top dresses and hats and have tea. She actually has a tea put like that and loves it! She would love the flower pattern of your cups!

  3. I literally do not know what to comment on first. The cups are delightful and remind me of when I brought my mom and my then 5 year old daughter out for a proper tea. We wore fancy hats and everything.
