Ranch House Casserole

I just love a casserole that I can put together with things that are in my pantry and refrigerator without having to make a special trip to the store. This is a casserole that can be served for company, go to the club or church covered dish dinner, or a nice week night family meal. I have made this casserole for years and we love it every time I make it, and I sure hope you enjoy it.

Recipe Tip:
I keep cooked rice in 2 cup bags in my freezer to use in casseroles or other dishes. It is a big time and energy saver.

  1. That looks really tasty! I love Southwest food :)

  2. This could easily be adapted to be gluten-free (I have a mix I put together for cream of mushroom that has no gluten). It looks hearty enough for my diabetic husband as well if I use brown rice. Thanks for the recipe!

  20. Hi Miz Helen.

You make comfort food like nobody's business!! I am not a very good cook, so I followed the recipe exactly. I think in the written instructions, the directions to add in the diced tomato juice is missing. I think that because I made the whole thing and couldn't figure out why I had that left over. :) Thank you!

    1. Hi Nicole,
Thank you so much for bringing that error to my attention, I corrected it right away. I had it pictured but just left it out of the directions. I sure hope your Casserole was good. Thanks so much for stopping by and I appreciate your comment! You have a great day!
