Oven Bar B Que Chicken

We love to have a cook out, however the weather does not always cooperate. This has always been my "plan B" recipe for a rained out cook out. This is such a great recipe that sometimes I just make this Bar B Que Chicken rain or shine. The chicken is so tender it will just come right off the bone and the flavor is amazing.Our family and friends always love this recipe and will come back for seconds.

We Use A Whole Chicken For This Recipe

Oven Bar B Que Chicken
Miz Helen's Kitchen
Ingredients
3 to 4 pound whole chicken
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne
4 yellow onions, sliced
For The Sauce
1 medium yellow onion, chopped
3 cloves garlic, minced
1 cup ketchup
1/4 cup vinegar
1/4 cup Worcestershire
1/2 cup Honey
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
Directions
For The Sauce
In a medium sauce pan sweat the onions until clear.  Add all the remaining ingredients mixing well. Bring to a boil and reduce the heat to medium low and cook for 15 minutes.  The Sauce will be ready for use at that point.
Season Mix
In a small bowl stir together the garlic powder, onion powder, salt, pepper and cayenne.
The Chicken
Wash the chicken and cut the back out of the chicken. Lay the chicken flat on a cutting board and season the chicken with the season mix, making sure the chicken is completely covered.
In a large baking dish lay the 4 sliced onions on the bottom of the dish and drizzle 1/2 of the sauce over the onions.
Lay the flat chicken on top of the sauced onions.
Drizzle the remainder of the sauce on top of the chicken.
Cover the chicken with foil paper.
Roast in a 425 oven for 1 hour and 15 minutes.
Remove from the oven and uncover.
Let set for 15 minutes before serving.
Serve the sauce from the baking dish on top of the chicken or on the side.

    1. Hi Kitchen Monkey,
      I am sure it could be adapted to a slow cooker. Most slow cooker conversions are set for 325 degrees and this is cooked at 425 degrees. I would cook it whole and not take the back out, onions on the bottom, sauce and chicken, then more sauce. I would try it 5 hours on high and then check it, it should be just about right. When using a slow cooker, I always preheat it, that helps with the temperature. Thanks for stopping by and enjoy the recipe.
