Baked Huevos Rancheros

My husband grew up on a cattle ranch and one of his favorite breakfast from those days is Huevos Rancheros. I will often times surprise him with some of his favorites and this is one of those recipes. The orginal recipe that we used from the ranch bunk house, used fried tortillas and fried eggs. I changed the recipe a number of years ago in an effort to be able to make more Rancheros at the same time and be able to serve the guest at once instead of just one or two at a time and asking folks to wait for theirs to be cooked.  My husband and our guest love this recipe and I am so happy to share it with you today.

Ingredients For Baked Huevos Rancheros
Serves 4
4 Baked Tortillas
1 (16 ounce) can Refried Beans
1/2 teaspoon cumin
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup Chunky Salsa (I use Garden to Table Canned Salsa)
4 eggs
1 cup sharp cheddar cheese, shredded
Extra Salsa for serving
Directions
In a skillet over medium heat, pour in the refried beans and the salsa and mix until thoroughly combined.
Add the cumin, salt, and cayenne and mix well.
Make sure the refried bean mixture is kept very hot, until you are ready to build the rancheros.
Place a baked tortilla in the center of a individual iron skillet.
Place 1/2 cup of the bean mixture on the tortilla.
Make a well in the center of the bean mixture and place the egg very carefully in the center of the well.
Bake the Huevos Rancheros in a preheated 400 degree oven for 8 to 10 minutes until the white of the egg is set.
Remove the skillet from the oven and sprinkle with the cheese and a dollop of salsa.
Serve with Baked Tortillas and Salsa on the side.
Enjoy!

  5. What a great idea! At home, here in Mexico, we also love huevos rancheros for breakfast, but it's definitely a hassle to cook one plate at a time. Nice recipe! I shared this on my Mexican Food pinterest board and on Twitter :)
