Pecan Coffee Cake With Bacon

  We really enjoy a brunch menu on weekends and special holidays, this Pecan Coffee Cake With Bacon is a great recipe for our brunch. The coffee cake is so moist with great seasons, then topped with a crunchy mix of pecans and bacon, oh my goodness this is delicious! I even served it to my husband and a couple of his friends who had gathered at the cottage for coffee, they loved it!


Crustless Bacon-Sweet Potato Sheet Pan Quiche

I really love a sheet pan recipe for serving a crowd or just for one or two and freezing the remainder in individual freezer bags. This is a great recipe for doing all of those, not to mention it is delicious. It has some of my favorites, sweet potatoes, bacon and spinach along with some other delicious seasons. I recently made this recipe for my husband and I then bagged the remainder in freezer bags and placed them into the freezer. Now these special quiche are ready for us to grab and go. This is a flavorful recipe that we really enjoy!


Pumpkin Waffles

  Our family loves to get in the kitchen on weekends and make pancakes or waffles. My husband is a great pancake and waffles master chef and is in the kitchen having fun with me today. Our Pumpkin Waffles recipe is just delicious and we love to top them off with blueberries and syrup. Sometimes we will add some bacon or sausage on the side and what a meal, it is amazing! Our recipe is filled with just the right amount of spice with a wonderful pumpkin flavor.


Easy French Toast Recipe

  We just love French Toast here at the cottage, but we don't always have a lot of prep time to make it. I really like this recipe because it has a custard base that is very rich and delicious. You and your family will be sitting down to enjoy this French Toast in a short time. We always try to garnish with fruit in season to give it a very special topping. For a quick breakfast or a weekend brunch this is a great recipe to try for French Toast.


Poached Eggs

My husband was recently confined with Covid 19 Virus, and he was very sick. One of the breakfast that he wanted the most was poached eggs, this was his favorite breakfast, he said it always made him feel better. This is what his plate looked like every morning. Canadian Bacon poached eggs, a little pad of butter on yes, that is what you see, his requested "white bread", with a large cup of Orange Juice. When someone is as sick as he was you just give them whatever they will eat. Commonly served on English Muffins, I just happened not to have those while in quarentine, but we sure had plenty of his favorite "white bread". We have stopped a long time ago on selling him on the benifits of whole wheat bread.


Sausage-Potato Brunch Casserole

We love a great breakfast or brunch casserole to serve a crowd here at the cottage. Our Sausage-Potato Brunch Casserole is one of the recipes that we really enjoy serving our family and friends. I have often times taken this casserole to a covered dish brunch function and everyone always love it. This recipe is filled with a very special flavor with a little kick with lots of potatoes, veggies, cheese and eggs, it is a delicious combination. If we don't have a crowd, I divide the casserole in indiviual servings and freeze them, these indiviual servings are a great grab and go.


Sausage Crescent Bites

It's time to put together some great appetizer's for the party season. We love these Sausage Crescent Bites, they are very flavorful and so easy to put together. I always make a double recipe because with our group 1 recipe is never enough. I have used this recipe for a very long time and have taken it to parties and have served it many times here at the cottage, they are even amazing for brunch!


Pumpkin Roll Breakfast Bake

This recipe for Pumpkin Roll Breakfast Bake will give your guest something real special to wake up to. When we have weekend guest or just a very special brunch I love to serve a nice breakfast bake, I like to serve it with a little fruit, syrup or a very special sauce. This recipe will have your family and guest coming back for seconds, it has wonderful warm flavors and is so easy to put together, it will be on your table in no time.


Garden Fresh Fritatta

It is so nice to  be able to have a really nice brunch dish on the weekend when we can just take our time to really enjoy some time together with friends and family. This Garden Fresh Fritatta is a great recipe that takes you from the garden to the table with lots of fresh vegetables. I love to invite our guest to come to the garden and help harvest some of the ingredients for the dish that we are about to make, we have so much fun. The combination of flavor in this recipe is really delicious and is so fresh. For the off season when the garden is no longer producing most of these vegetables can be found at your local farmers market of your supermarket. I often times make this recipe and freeze it in individual servings for up to two months, it is a great grab and go breakfast!


Sausage and Biscuits Breakfast Casserole With Pepper Gravy

There is nothing like sausage, biscuits and gravy for a very southern breakfast. This casserole has all those wonderful elements rolled into one casserole that is absolutely delicious, then we drizzle Pepper Gravy over the serving to top off the flavor. This is like sitting down to Grandma's table with everything in one nice baking dish. A breakfast casserole is always a great way to feed a large group for breakfast or brunch. We will be serving this casserole next weekend to a large group and I know they will love it. 


Southern Potato & Sausage Gravy With Buttermilk Biscuits

I have watched my Mother, Grandmother and other family members make this dish for breakfast, lunch or supper, and for me, I will eat it anytime, it is just that good. It is served on a fluffy hot biscuit or a crisp slice of toasted bread and no matter when you have it, this recipe is pure comfort, southern style!


Southern Sausage and Grits Brunch Casserole

I am expecting a group of friends and family to stop by for brunch over the weekend and wanted an old favorite brunch casserole to serve. This is a casserole that my Aunt made for her ladies club spring brunch and passed the recipe on to other family members and eventually to me. I have changed it a little, but it still has the great flavor for this southern combination.  This is a very easy casserole to make and is ready in no time to set on the table for folks to enjoy!


Italian Brunch Casserole

Sometimes we have a lot of weekend guest with family and friends coming out to the country and the lake to play and just relax. I like to have a nice brunch dish that I can serve that doesn't take a lot of time and yet has a great flavor. I love this Italian Brunch Casserole because it is real easy to make and has outstanding flavor combination. It is a little different than the regular breakfast bake. I recently took it to a morning brunch and the dish was empty in no time.


Cranberry Herb Brunch Bake

We often times have guest in our home for the weekend and it is so nice to serve a lovely Brunch Bake with a simple side of fruit for breakfast or brunch. When it is just the two of us we will enjoy the bake and then freeze the rest in individual serving bags for a grab n go breakfast on a busy day. I developed this recipe recently and have served it several times, it has received great reviews. The combination of herbs is a perfect balance with the cranberries and topped out with a Gruyere to give it a very distinctive flavor. Hope you will enjoy our new Brunch Bake.


Pear & Walnut Coffee Cake

You know there is going to be a special breakfast when you wake up to the smell of a lovely Coffee Cake baking in the oven. This is a delicious recipe and it takes a very short time to put together and have in the oven. It is filled with warm spices and fresh pears nestled in a light and fluffy cake with a nutty crumble topping. Our family loves this coffee cake and it is often times a request from returning house guest.


Strawberry Breakfast Bake

We love to have a nice brunch or a really late breakfast here at the cottage, especially on weekends. If the weather is nice we like to have our brunch or breakfast out on the screen porch. We have enjoyed some beautiful strawberries from the strawberry patch this year and I thought these would sure make a great brunch dish and so they have. This is a fantastic recipe that we will enjoy over and over.


Crock Pot Brunch Frittata

We really enjoy a weekend brunch and often invite friends to share a meal and just relax. This Crock Pot Brunch Frittata is a perfect dish for a weekend gathering. The recipe has a fresh combination of peas, asparagus, onions and ham, all those wonderful flavors in one dish. I just add some fresh basil from the herb garden and this dish is ready to cook and serve. If you are making this for two, just cut the left overs in individual servings, pop in a freezer bag and freeze for a quick breakfast later.


Apple Pie Breakfast Bake

This is the most delicious breakfast bake and it taste just like Apple Pie. Who wouldn't want Apple Pie for breakfast? When I made this for my family recently they all just loved it and there was not a bite left. This is a real easy breakfast bake to make and in no time it is ready to be served. Spicy Cranberry Granola

One of my favorite breakfast is a plain yogurt with a topping of granola or fresh fruit.If I can combine the granola and fruit all the better. My Spicy Cranberry Granola is one of my favorite recipes, and can be used on yogurt, ice cream or just a bowl of fruit, I have even sprinkled some on a salad and it was fantastic! In addition to being a great granola mix, it makes a great gift for a friend or family member. My friends and family just love getting a lovely jar of this granola for a hostess, birthday or christmas gift.


Baked Huevos Rancheros

My husband grew up on a cattle ranch and one of his favorite breakfast from those days is Huevos Rancheros. I will often times surprise him with some of his favorites and this is one of those recipes. The orginal recipe that we used from the ranch bunk house, used fried tortillas and fried eggs. I changed the recipe a number of years ago in an effort to be able to make more Rancheros at the same time and be able to serve the guest at once instead of just one or two at a time and asking folks to wait for theirs to be cooked.  My husband and our guest love this recipe and I am so happy to share it with you today.
