We really enjoy a brunch menu on weekends and special holidays, this Pecan Coffee Cake With Bacon is a great recipe for our brunch. The coffee cake is so moist with great seasons, then topped with a crunchy mix of pecans and bacon, oh my goodness this is delicious! I even served it to my husband and a couple of his friends who had gathered at the cottage for coffee, they loved it!

Just Look At All That Wonderful Butter
That Mixes In With The Dry Ingredients
Some Will Be Set Aside For The Topping

Make A Well In The Center Then
Slowly Whisk In The Liquid

Mix Together Until Completely Blended

Pour Into A Buttered Baking Pan

Reserved Dry Ingredients On Top

Then Bake And Cool On The Rack!

Ingredients
1/3 cup unsalted butter, ice cold, cut in tiny cubes
2-1/2 cups all-purpose flour
1-1/2 cups dark brown sugar
Dash salt
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon all-spice
1-1/2 cup buttermilk
1/2 cup Raspberry syrup
1/3 cup applesauce
2 eggs, beaten
1 tablespoon butter for baking dish
1 cup pecans, chopped
6 thick bacon strips, cooked crisp, small chop
Directions
Sift the flour into a large mixing bowl, add the brown sugar and salt, then stir well. 
Add the ice cold butter cubes and work the butter into the dry ingredients until you have medium size pebbles. 
Set aside 1/3 cup of the dry and butter mix to use for the topping.
Add the baking powder, baking soda, cinnamon, and all spice to the remaining flour mix in the large mixing bowl.
In a mixing pitcher, mix the buttermilk, syrup, applesauce and the beaten eggs. Whisk this mixture well until completely blended.
Create a well in the center of the dry ingredients and pour the liquid slowly into the well, stirring to incorporate all the ingredients.
Pour the batter into a buttered 9 X 13 baking dish.
Sprinkle the reserved 1/3 cup of dry ingredients on top of the batter.
Sprinkle the pecans and bacon on top of the dry topping.
Bake in a 350 degree oven for 35 minutes or until the center test clean.(This will depend on your oven).
Remove from the oven and place on a cooling rack. Let cool for at least 15 minutes before serving.
