Nana's Ham and Potato Casserole

There are so many recipes that we enjoy for our left over ham, and Nana's Ham and Potato Casserole is a family favorite. So easy to put together, and in just a little while you have a great casserole for the family and the left overs are gone. Often times when I am making my meal plans I will plan the left overs as a part of the meal plan, if you are going to be cooking anyway go ahead and make enough for another meal and take a night off.This recipe has all the ingredients of a full meal, all that is needed, a hungry family.

Nana's Ham and Potato Casserole

Ingredients
3 cups Ham, chopped
1 (12 ounce) bag frozen peas and carrots
3 cups mashed potatoes
1 cup sour cream
3 cups cheddar cheese, shredded
4 tablespoons butter
4 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
1 teaspoon parsley
dash cayenne pepper
Directions
In a large hot skillet, melt the butter and add the flour. Stir until the flour is cooked, then add the milk and stir until blended, this will be thick.  Add the ham, and frozen vegetables. Stir the ham and vegetables until completely blended. 
Add the salt, pepper, thyme, parsley, and cayenne pepper.
Cook on medium for 5 minutes. Remove from heat.
In a mixing bowl, mix your (left over) potatoes with 1 cup sour cream and 1 1/2 cups of the cheese, set aside.
In a 9X13 baking dish pour the ham and vegetable mixture into the baking dish and cover with the mashed potato mix. Sprinkle the remainder of the cheese on top of the potatoes.
Bake in a 350 degree oven for 30 to 45 minutes, until the casserole is bubbly and just starting to brown.
Remove from the oven and let set for 15 minutes before serving (if you can wait that long).
