Old Fashioned Carrot Salad

I love an Old Fashioned Carrot Salad, it is really good anytime of the year, but especially in the winter when the other garden vegetables are not available. This is a very easy salad to make and one that is very kid friendly. Our kids always just love this salad and if you can get kids to eat veggies that is great! I remember my Grandmother and my Mother making this salad and I have made it for many years, it is one of our favorites.

This Is A Great Side Salad For Any Meal

Old Fashioned Carrot Salad
Miz Helen's Kitchen
Ingredients
4 cups carrots, shredded
1 cup raisins
1 (15 ounce) can pineapple chunks, drained
1/4 cup mayonnaise (I use Miracle Whip)
2 Tablespoons sugar
3 Tablespoons heavy cream
dash salt
Directions
Mix the mayonnaise, sugar, cream and salt in a mixing pitcher until completely blended.
Stir the shredded carrots, raisins and drained pineapple into a mixing bowl.
Pour the dressing mix over the carrot mix and stir, until completely blended.
Optional Garnish
Sharp Cheddar, shredded
Refrigerate after serving.

This is really one of my favorite salads, it is full of goodness and it is very versatile. This salad has been on our table for many special dinners or just a weeknight supper or a ladies luncheon.
