Chicken and Dumplings

We just love Chicken and Dumplings, it really is a very comforting food. When the weather begins to turn chilly, one of the things I always want is Chicken and Dumplings. I usually double the recipe and invite someone to share it with us and today that is you.

The Chicken
1 whole chicken
2 stalks celery, chopped
2 carrots, chopped
1 small onion, chopped
1 teaspoon thyme
1 medium sprig of fresh rosemary
1 teaspoon poultry seasoning
1 tablespoon parsley
Salt and Pepper to taste
2 tablespoons butter
Option: 2 cups half and half
Using a large stock pot add the whole chicken, chopped vegetables and seasons. Cover the mix with water and cover the stock pot. Cook over medium heat until done about 45 minutes to 1 hour. Remove the chicken and the vegetables from the broth. Add the butter to the broth and the half and half then set the broth aside leaving in the stock pot.  Let the chicken cool and remove the meat from the bone.
Dumplings
2 cups flour
2 teaspoons baking powder
1/2 teaspoon soda
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
1 egg
3/4 cup buttermilk
Mix the dumplings as if for biscuits. Drop the dumplings by the tablespoon into the boiling broth. Cover the stock pot and simmer about 10 to 15 minutes, turning  the dumplings once.
To Serve
Place some of the stewed chicken in the bottom of the bowl then spoon the dumplings and gravy over the chicken, adding some chicken to the top. I garnished with a sprig of rosemary.

  1. I made Chicken and Dumplings for the first time, early this fall. It was sooo good! I cheated though, and used refrigerated biscuit dough for the dumplings :)

  3. Oh I love this recipe! I usually use a Bisquick recipe for my dumplings, but am going to try yours the next time I make chicken and dumplings. And I like that yours has more liquid. Thanks for sharing the recipe!

  7. Oh, Miz Helen-I can't think of any other dish more comforting and with fond memories, than chicken and dumplings, and you made it so incredible with such fluffy dumplings, and creamy chicken broth...yummm!
    Even though I'm on the weight watchers diet, I will find a way to fit this into my program!

  14. The first time I ever had chicken and dumplings was when I was about 11 years old. One Sunday a friend invited me to spend the afternoon with her after church and her grandmother had made chicken and dumplings. I remember eating an obscene amount of it and my friend just kept laughing at me because I had never even heard of dumplings. I am so excited about your recipe because it looks just like the chicken and dumplings that I had at my friend's house. Thanks so much for sharing.
