When we spent some time in Germany one of the dishes that I loved was their sweet and sour cabbage, it was just delicious. My recipe for sweet and sour cabbage with sausage has a southern twist to this classic recipe. We love this dish and I don't have to talk about left overs because there are rarely any left overs. This is one of those southern comfort dishes here at the cottage, that I usually serve with or over mashed potatoes and it is really good with no sides at all.

Sweet and Sour Cabbage with Smoked Sausage
Miz Helen's Kitchen
Ingredients
1 tablespoon olive oil
1 pound smoked sausage, sliced
4 tablespoons butter
1 medium red delicious apple, medium slice with peeling on
1 medium gala apple, medium slice with peeling on
1 large yellow onion, large chop
4 cups purple cabbage, large chop
4 cups green cabbage, large chop
1 cup apple juice
1/4 cup apple cider vinegar
1 tablespoon balsamic vinegar
1/4 cup brown sugar
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
Directions
In a heavy sauce pot, heat the olive oil and brown the smoked sausage, then remove the sausage to a plate to rest.
Add the butter to the sauce pot, then saute the apple and onion until the onion is clear and the apple is just turning light brown on the edge.
Add the cabbage and cook until the cabbage is wilted.
Add the smoked sausage back into the sauce pot with the cabbage and stir well.
In a mixing pitcher, add the apple juice, vinegar's, sugar, salt and peppers, mix well.
Pour the apple juice mix over the cabbage mix and stir well.
Cover the sauce pot and cook until the cabbage is tender, about 20 minutes.
Serve with or over potatoes or noodles. It is really great without any sides!
