Retro Pork Chop Dinner at Miz Helen's Country Cottage

This was one of my Mothers favorite Sunday recipes. She would put her recipe together in the heavy dutch oven. bake it then it would be ready to set on the table when we came home from church. I can still remember the smell when we would open the door, it was wonderful! It is the ultimate one pot meal with all the flavor of a delicious blend of ingredients. As time went along I made this dish for my family and I still make the recipe, it is just one of those Retro meals that we grew up with and passed on to our family. We recently had dinner with our daughter and guess what we had, it was the Pork Chop Dinner, I guess you could say it is a favorite at our house!

Retro Pork Chop Dinner
Miz Helen's Kitchen
Ingredients
2 tablespoons vegetable oil
4 to 6 center cut pork chops, medium cut
4 medium white Irish Potatoes, peeled, sliced
2 medium yellow onions, sliced
7 Slices American Cheese
1 (10 ounce) can cream of mushroom soup
1 (12 ounce) can evaporated milk
2 teaspoons dried thyme
generous use of salt and pepper on each layer
Directions
Sprinkle the chops with the dried thyme, salt and pepper.
In a heavy dutch oven, heat the oil until hot and sear the chops. Remove the chops to a holding plate and set aside. When all the chops have been seared place them back into the dutch oven.
Layer the onions on top of the chops and salt and pepper the onions.
Layer the potatoes on top of the onions and salt and pepper the potatoes.
Layer the cheese slices on top of the potatoes.
Mix the soup with the evaporated milk then pour it over the layer of cheese.
Place the lid on the dutch oven and place in a 350 degree oven.
Bake in a 350 degree oven for 45 minutes to 1 hour.
