Cream of Turkey Vegetable Soup was developed one year on the day after Thanksgiving some years back. The recipe turned out to be such a hit with our family it is served here at the cottage year round. This soup recipe is loaded with vegetables and some left over roasted turkey in a delicate creamy soup. There are never any left overs of this soup, it is delicious!

Cream of Turkey Vegetable Soup
Miz Helen's Kitchen
Serves 6 to 8
Ingredients
2 tablespoons vegetable oil
1 cup celery, chopped
1 onion, chopped
1/2 cup all-purpose flour
2 tablespoons butter
4 cups chicken or turkey broth
2 cups half & half
1 tablespoon dried thyme
1/2 teaspoon sage
2 teaspoons parsley
1 teaspoon salt
1 teaspoon pepper
3 cups frozen mixed vegetables
3 cups turkey or chicken, chopped
Directions
In a large heavy stew pot, heat the vegetable oil, then sauté the celery and onion until the onion is clear.
Stir the flour into the celery and onion mix, stir and cook until the flour is incorporated.
Stir in the butter, then add the broth stirring to incorporate the flour mixture, it will begin to thicken.
Add the half and half to the mix and stir until it is completely blended, it should be a very smooth creamy sauce.
Stir in the thyme, sage, parsley, salt and pepper, mix well.
Last add in the vegetables, turkey or chicken.
If the soup is to thick for you then just add more broth to thin.
Place the lid on the stew pot and let simmer on low for 30 to 45 minutes, stirring every once in a while to keep from sticking on the bottom.
