A big part of our family heritage is Irish and I love to make special Irish recipes. Most of the Irish recipes that I make are passed down to me by different family members. This recipe for Guinness Irish Chocolate Cake was handed down to me from one of my Aunts and it is easily one of my favorite chocolate cake recipes. The flavor of the cake is absolutely so good it really doesn't need a frosting to top it. We do have the perfect frosting with a creamy rich flavor that is a great compliment to this Irish family favorite!

Whisk In The Sugar and Coco Mix

Next We Are Adding A Mixture of
Eggs, Sour Cream and Vanilla

Slowly We Will Add The Flour Mixture

Blend All The Ingredients Until Smooth

Pour This Rick Thick Batter Into The Nine Inch Springform Pan

Bake, Then Cool Completely Before Frosting

Remove From The Springform Pan After Cooled

Prepare The Creamy Frosting

Ingredients
Please Read The Recipe All The Way Through Before Beginning 
1/2 cup butter, cubed
1 cup Guinness (dark beer)*(see substitute)
2 cups sugar
3/4 cups cocoa
2 eggs, room temperature, beaten
2/3 cup sour cream
4 teaspoons vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking soda
Frosting
1 (8 ounce) cream cheese, softened
2 cups confectioners' sugar
1/2 teaspoon clear vanilla extract
1/3 cup heavy cream
Directions
In a small bowl whisk together the sugar and cocoa, set aside.
In a small bowl combine the eggs, sour cream and vanilla, set aside.
In a small bowl whisk together the flour and baking soda, set aside.
In a large sauce pan heat the butter and very slowly add the beer. 
After the mixture is heated, remove from heat.
Whisk in the sugar and cocoa mixture, until completely blended.
Stir in the eggs, sour cream and vanilla mixture until completely blended.
Whisk in the flour and baking soda mixture, whisk until completely blended and smooth.
Pour the batter into a 9 inch greased with a parchment bottom liner springform pan.
Bake in a 350 degree oven for 45 minutes, or until the center test clean.
Remove to a cooling rack and let cool in the pan until room temperature.
Remove the pan and place the cake on a serving cake plate.
Frosting Directions
In a medium size mixing bowl, with a hand mixer, mix the cream cheese until completely smooth and creamy.
Add the confectioners sugar and gradually add the heavy cream until you have reached the consistency that you prefer.
Frost the cake and enjoy!
Recipe Tip *Substitute the beer with a cup of root beer.
