Potato Gnocchi Salad recipe is a different take on a potato salad, and it is delicious! I love gnocchi, but I haven't made it in years and when I was shopping I noticed that I could get it in a box. Of course I had to try it, and I am so glad I did. What a great product that I am sure I will use again and again. Let me say right here I am NOT PAID for the promotion of this product, I just like it and am happy to pass it on to my friends. I developed this recipe especially for my new found product and it will be going to a lot of picnic's and covered dish dinners very soon!

How To Make Potato Gnocchi Salad

Just follow the directions on the side of the box and in just a few minutes your potato gnocchi is ready to use in any dish or as a main dish.

First we will boil the potato gnocchi
 in salty water for just a short time.
When it is ready it will just float to the top of the water.

After The little nuggets have all floated to the top of the water
Drain them well in a colander and I just let mine cool in the
colander until I was ready to make the salad.

In a very large mixing bowl I mixed the potato gnocchi with the 
bell peppers, onions, cheese and pimentos. 
I love this mix of vegetables and cheese 
for a delicious salad flavor.

All mixed together with the sauce and seasons, ready for
the refrigerator to sit for a few hours.

The Potato Gnocchi Salad Is Ready To Serve!
Potato Gnocchi Salad
Miz Helen's Kitchen
Serves 6 to 8
Ingredients
1 (16 ounce) box Potato Gnocchi
1 green bell pepper, chopped small
1 cup red onion, chopped small
1 (4 ounce) jar pimentos, diced with juice
2 cups Velveeta Cheese, cubed small
1-1/2 cup miracle whip dressing
1/8 teaspoon cayenne
salt and pepper to taste
Directions
Prepare the potato gnocchi according to package directions.
After preparation, drain and cool to at least room temperature.
Put the potato gnocchi into a very large mixing bowl.
Add the green bell pepper, red onion, pimentos, cheese and mix well.
In a small mixing bowl, mix together the miracle whip dressing, cayenne pepper, salt and pepper to taste.
Add the dressing mix to the salad and mix well.
Refrigerate at at least 2 to 3 hours before serving, the longer it sits the better it gets.
