Lemon Herb Chicken Salad With Feta Dressing at Miz Helen's Country Cottage
I had some left over chicken from my Sheet Pan Lemon Herb Chicken and a basket of fresh greens from my garden that led to this delicious recipe. The salad has a base of delicious fresh greens and then we added some garden vegetables and the cold Lemon Herb Chicken. We topped it out with a delicious Feta Dressing that we have fell in love with. This is a great garden to table recipe and can be served for lunch or dinner.

We start the recipe with beautiful fresh greens from our lettuce tub. Then we will add some fresh herbs from the herb garden.

Next we will be adding some fresh cherry tomatoes, radishes, cucumbers fresh green onions, peppers and avocado.

Mix all the fresh garden vegetables together and then mound the vegetables onto the center of the fresh greens.

The salad is delicious with just a nice squeeze of lemon juice over the top. But our Feta Dressing will give it a very special touch. For our Dressing, everything goes into the little food processor.

The base of the dressing is Feta Cheese, lemon juice & zest, with a little honey to sweeten the pot. Then next we will add some seasons and fresh herbs to serve.

Lemon Herb Chicken Salad With Feta Dressing
Miz Helen's Kitchen
Ingredients
6 cups fresh salad greens
2 cups cherry tomatoes, cut in half
1 cup radish, sliced
1 cup green onions, chopped
1 cup red bell pepper, chopped
2 cups cucumber, quartered & sliced
2 ripe avocado's, 1 chopped & 1 sliced 
Dressing
6 ounces Feta Cheese
2 Lemons
2 tablespoons honey
1 teaspoon pepper
1/2 cup chopped, mixed together, fresh rosemary, thyme and tarragon, saving 1 tablespoon for garnish.
1 pinch red pepper flakes for garnish.
Directions
Wash and dry all the greens and fresh vegetables.
Add the cut cherry tomatoes, sliced radishes, chopped green onions, chopped red bell pepper, chopped cucumber, chopped avocado & the chopped Sheet Pan Lemon Herb Chicken into a large mixing bowl and toss together.
Place the fresh greens on a serving platter and place the mixed vegetables and chicken in the center. Place the sliced avocado on the sides and top.
Dressing
Place the Feta Cheese into a small food processor. Add the lemon juice, pepper, juice from the lemons, honey, and mixed herbs. Pulse the processor until the mix is smooth. Add water to reach the consistency that you want. It can be thick or thin, I like mine in-between. Garnish the dressing with some of the chopped herbs and a pinch of red pepper flakes.Print Friendly and PDF

      No it's just the dark edges of the lettuce, but blackberries would be really good with the salad. We have some blackberries that are almost ready, I will have to try that. Thanks for stopping by today and hope you have a great day!
