Sheet Pan Lemon Herb Chicken at Miz Helen's Country Cottage
I developed this sheet pan recipe because it rained on my grilling day. I know this chicken is great on the grill because we have grilled it before, however when it rains on your cookout try the recipe in the sheet pan, it is delicious. This recipe has a great taste of lemon and fresh herbs that came straight out of my herb garden. I love to use this chicken in a special salad filled with fresh garden vegetables making this a true garden to table recipe.

We Will Start Our Recipe With
Fresh Rosemary, Thyme and Tarragon

We Will Chop These Herbs Fairly Fine and Combined Together

After The Chicken Has Been Washed and Dried, We Place It On A Sheet Pan We Salt and Pepper On All Sides Then We Cover The Chicken With Olive Oil and Lemon Juice. Last We Will Add Our Herb Mix and A Slice Of Lemon On Top.

Sheet Pan Lemon Herb Chicken

Sheet Pan Lemon Herb Chicken

A delicious sheet pan chicken with a mix of fresh herbs and lemon. A great recipe for the sheet pan or the grill.
Prep time: 15 MinCook time: 35 MinTotal time: 50 Min

Ingredients

  • 6 chicken breast, boneless, skinless
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 3 tablespoons olive oil
  • 3 Lemons
  • 2 sprigs fresh rosemary, chopped fine
  • 2 springs fresh tarragon, chopped fine
  • 2 springs thyme, chopped fine

Instructions

  1. Wash and dry the chicken and place on the sheet pan.
  2. Chop the herbs, mix them all together and set aside. 
  3. Mix the salt and pepper together and sprinkle on the chicken on all sides. 
  4. Cover the chicken with the olive oil, making sure all all sides are covered.
  5. Slice one of the lemons to place on top of the chicken for garnish.
  6. Use the juice of the two remaining lemons on the chicken, turning the chicken to cover well.
  7. Sprinkle the herbs all over the chicken on the top side.
  8. Place one lemon slice on top of each chicken breast.
  9. Open roast the chicken in a 425 degree oven for 30 to 40 minutes.
  10. Serve  hot or cold.

Notes:

This recipe is great for a sheet pan or the grill. The chicken is delicious served as a main course or to complement a salad.
