3/4 cup sugar
2 tablespoons cornstarch
3/4 cup milk
3 egg yolks
3 tablespoons lemon juice

1 tablespoon butter
Mix sugar and cornstarch. Add milk and egg yolks. Mix well. Cook over medium heat until mixture is thick, stirring constantly.  Remove from heat and add lemon juice, lemon zest and butter. Pour into bowl, place a piece of plastic wrap on top of the pudding to prevent a skin from forming. Cool completely before serving.
