Miz Helen's Chicken Salad

Today I would like to  continue giving you some of my recipes that I make with the Roasted Chicken. Just about everyone has a favorite Chicken Salad. that always goes to the covered dish luncheons, the afternoon tea's, church socials and the old family stand by. This is my Chicken Salad recipe that has gone to all those places and the one that I reach for the most and is the most requested.

We start the Chicken Salad with a nice
 Roasted Chicken.

Chop The Chicken

Chop The Apples and Celery

Chop The Grapes

Add The Dressing and Mix

Miz Helen's Chicken Salad
Miz Helen's Kitchen
3 cups Roasted Chicken (breast meat) chopped
2 cups celery with leaves chopped
2 cups red delicious apple with peeling chopped
2 cups red or green grapes chopped
1 cup Sour Cream
1 cup Mayo
1 teaspoon fresh thyme leaves or dried thyme
1 teaspoon dill weed
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon black ground pepper
dash cayenne pepper
Starting with a Chicken Breast from a Roasted Chicken, chop the chicken and add to  large mixing bowl.
Add the chopped celery, apple, and grapes. Mix well
Mix the sour cream, mayo, thyme, dill weed, ginger, salt, pepper and cayenne in a separate bowl .
Pour the sour cream mixture over the chicken mixture and mix well.
Refrigerate for at least 1 hour before serving.
Recipe Tip:
I like to serve it on a bed of  bib lettuce with a garnish of fresh fruit or in a large bowl for a crowd. This is also makes a great sandwich or a wonderful filling for cream puffs.

  2. We like our chicken salad very much the same as your recipe! It's a favorite here. I enjoy varying the fruit in it to go with the seasons. Blueberries and peaches are yummy in the summer as are dried cranberries in the fall.
