Irish Apple Cake at Miz Helen's Country Cottage

This Irish Apple Cake is a very old and primitive, but delicious recipe. I actually found it in some of my Aunt's recipes that had been handed down to me from my Irish Grandmother. The outside of the cake has a nice sweet crust and the inside is a wonderful crumb of spices and lovely bites of apples. I have made the cake for years and it is a hit every time I make it. What better way to celebrate being Irish than with a slice of this fantastic cake!

Irish Apple Cake
Miz Helen's Kitchen
Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
8 tablespoons cold butter, cubed
3/4 cup sugar
4 apples, I used 1 Granny Smith, 1 Red Delicious, 2 Gala's
2 eggs
3/4 cup milk
1 teaspoon vanilla
2 tablespoon sugar, for cake topping
Directions
Sift into a very large mixing bowl, the flour, baking powder, salt, nutmeg, and cloves.
Cube the butter into small cubes, then cut it into the flour mixture until the mixture is like fine crumbs.
Add the sugar to the mix.
Peel the apples and chop into very small bite size pieces.
Toss the apples bites with the flour mixture, make sure that everything is blended well.
In a mixing pitcher, beat the eggs and add the milk and vanilla.
Pour the egg and milk mixture into the apples and flour mixture, mix until blended well. Batter will be very thick.
Butter and flour a 8 inch spring form pan.
Spoon the batter into the pan and pat the top down.
Sprinkle 2 tablespoons sugar on top of the cake.
Bake at 375 degrees for 50 to 60 minutes, or until the center test done. The cake will be very brown on the sides.
Let cool completely before slicing.
Garnish with whipped cream for serving.
