I find it very difficult to have just one slice of this cake, it truly is that good! This recipe has been around our family and friends for years and still comes up as one of our all time favorites. The balance of sweetness with the cocoa and the blend of spice with the Coca -Cola, what a great recipe. This is a recipe that will serve a large crowd or a very hungry family. I can't tell you how many times this cake has gone to pot-luck suppers, picnics or gatherings with friends and family. You can't go wrong with this old stand by!

Coca-Cola Sheet Cake With Coca-Cola Frosting

Serves 24
Ingredients
2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
2 teaspoon ground cinnamon
2 cups Coca-Cola
1 cup butter, cubed
1 cup cocoa
2 large eggs, lightly beaten
Frosting
1/2 cup butter, cubed
1/3 cup Coca-Cola
1/4 cup cocoa
3-1/4 cups confectioners sugar
2 teaspoons vanilla
1-1/2 teaspoon ground cinnamon
1-1/2 cups pecans, chopped
Directions
In a mixing bowl, sift together the flour, sugar, baking soda, and cinnamon.
In a sauce pan, add the Coca Cola, butter, and cocoa.
Stirring constantlly and bring to the boil, remove from heat and pour into the flour mix. Stir until smooth.
Whisk in the beaten eggs until incorporated.
Spray a 15 X 10 X 1-inch sheet pan with a baking spray.
Pour the batter into the sheet pan and bake at 350 degrees for 22 to 25 minutes, until set in the center.
Remove from the oven to a cooling rack. Cool completely before frosting.
For The Frosting
In a sauce pan pour the Coca-Cola, butter, vanilla, cinnamon and cocoa into the pan and stir over medium heat until smooth.
In a mixing bowl pour the confectioners sugar and then make a well in the center.
Pour the heated Coca-Cola mixture into the well and beat with a hand mixer until completely smooth.
Frost the cake and garnish with the chopped pecans.

  3. We live on the west coast of Florida, and we are really cold here too. I am in a sweater, leggings, and socks, and the heat is on! And I used to live up north and was fine in the cold weather. My dear, sweet mother used to make a coco cola cake, and I am going to drive myself crazy thinking what it was. She had early onset Alzheimers, and a lot of stuff went in the garbage, before I knew. Recipes, jewelry, photos, etc. Only now, years later, can I smile when I think of her and not cry. Stay warm!
