Asian Zoodles With Peanut Sauce

Ingredients
3 to 4 medium zucchini, spiralized into wide noodles
3 tablespoons sesame oil
3 cloves garlic, minced
1 cup shredded carrots
1 large green bell pepper, thinly sliced
3 cups shredded cabbage
Garnish: roasted peanuts and chopped green onions
Peanut Sauce
1/2 cup creamy peanut butter
1/3 cup honey
1/3 soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 teaspoon fresh ginger, minced
1 teaspoon hot sauce
Option ( 1/3 cup peanuts) roasted, chopped
Directions
In a very large skillet heat the sesame oil and garlic.
Add the carrots, bell pepper and cabbage one at a time and sauté each for about one minute each. 
Stirring all together cook for about 2 minutes. 
Add the Zoodles and cook for about 3 to 4 minutes until tender, then set aside.
To prepare the sauce in a medium sauce pan on low heat, pour in all the Peanut Sauce ingredients. 
Stir until completely blended and is smooth.
Plate the Zoodle vegetable mix onto a serving plater, serve the peanut sauce on the side and garnish with roasted peanuts and chopped green onions.
