One Pot Zuppa Toscana

    We have been adjusting to the heat over here in Germany (they don't do AC). However, the past week has been rainy everyday and even a little chilly in the evenings. So I took the opportunity to make a family favorite, zuppa toscana. She may not be the prettiest in the bunch, but this soup is delicious and budget friendly. Serve it with some nice bread for dipping on the side and enjoy! 


Ingredients

  • 5 russet potatoes- peeled and sliced into 1/4inch pieces 
  • 1lb Italian sausage ( Hot or mild)
  • 1 bag of spinach- stems removed 
  • 1 white onion finely diced
  • 5 cloves of garlic minced 
  • 4 cups chicken stock 
  • 6 cups water
  • 1 cup heavy cream 
  • salt and pepper 
  • Parmesan cheese (optional)
Directions 

In a large pot add your Italian sausage over medium high heat. Break it up with a spatula until cooked (about 5 minutes). Move your sausage to a paper towel lined plate. Add in your diced onion and saute until soft and browning, add minced garlic and saute for 1 minute. Add your 4 cups of broth and 6 cups of water. Bring to a boil.

When at a boil, add in your sliced potatoes. Cook for 13 minutes until potatoes are nearly done. Add in your spinach and cooked sausage and bring to a light boil.

Stir in 1 cup of cream and bring to a boil. Remove from heat and season with salt and pepper to taste. Top with fresh parmesan if desired.

Serve with some nice crusty bread and enjoy! 

** Leftovers will separate so make sure to mix well before serving.
