Monster Mashed Potato Balls

Halloween is almost here! Hopefully you are getting to celebrate with friends this year. We have some friends coming to visit and we are looking forward to it. I was trying to plan fun things to cook for the kiddos and my husband had this crazy idea, fried mashed potato balls. He also came up with the name! These are a fun and filling party food that can really be made anytime of the year. They are sure to be a graveyard smash! 


Ingredients: 

  • 6 medium potatoes 
  • 1/2 cup chives 
  • 1/2 cup diced cooked bacon 
  • 1/4 cup shredded cheddar cheese 
  • 1/2 panko bread crumbs 
  • 2 eggs 
  • Peanut oil or vegetable oil 
  • Salt and pepper 
  • Sauces of choice
  • 1-2 Tbsp butter if needed 
Directions 

Start by peeling your potatoes and cutting them into quarters. Cover with water and boil for about 20 minutes. While those are boiling you can cut up your chives and cooked bacon. Drain your potatoes and mash. You can add 1-2tbsp butter to help them bind together. Then mix in your chives, bacon, and cheese. Add salt and pepper to taste.

Get out a cookie sheet or baking dish, something that will fit in your freezer. Use a cookie scoop or ice cream scoop to make equal size balls and place them on your cookie sheet. You can line it if you would like to help them come off easier. Put in freezer for at least 3 hours.

Put your oil in a heavy bottomed pot. I used my dutch oven. Turn heat to high. Put your panko crumbs in a shallow dish, and some salt and pepper, and scramble your eggs then place in a shallow dish. Take out your potato balls. Coat in eggs, then in breadcrumbs.

Carefully lower ball into the hot oil. Do these with each ball. You can do 3-4 at a time.

Once you have a nice even golden brown place on a paper towel lined plate.

Let cool and enjoy! You can also dip these in whatever sauces you prefer. We used ranch but a sour cream would also be great!
