Our Retro Mexican Meatloaf is a perfect recipe to serve here at the cottage for all of our Mexican food lovers. I have been making this meatloaf recipe since my kids were in high school, I have changed it up a couple of times depending on the ingredients that are on hand at the time. It is great recipe to serve for a Mexican dinner with some salsa and tortilla's. It is one of our budget friendly, oldies but goodies!

How To Make Mexican Meatloaf Recipe

Just place all the ingredients into a large mixing bowl, thoroughly mix. Place into a baking pan, cover with foil and bake. Just before the baking is complete,  remove the foil and add the cheese.

Garnish the top with 
cherry tomatoes, fresh green onions
 and black olives before serving.

Retro Mexican Meatloaf

Retro Mexican Meatloaf

From our favorite retro family recipes. Delicious Mexican flavors to serve with homemade salsa.

Ingredients

  • 1 (6 ounce)box Uncle Ben's Mexican Fiesta Rice
  • 1-1/2 pounds ground chuck
  • 1 cup chucky salsa
  • 1 egg, slightly beaten
  • 1 envelope Onion Soup Mix
  • 1 cup crushed corn chips
  • 1 teaspoon pepper
  • 3/4 cup Mexican Cheese Mix, shredded
  • Garnish with Fresh Cherry Tomatoes, Fresh Green Onions, chopped & black olives.

Instructions

  1. Prepare the Mexican Fiesta Rice according to package directions and set aside.
  2. In a large mixing bowl, place the ground chuck, prepared rice, salsa, egg, onion soup mix, 1 cup crushed corn chips and black pepper. Mix the ingredients well.
  3. Place in a (9 X 5) bread baking pan and pat it down on top. Place foil on top of the pan.
  4. Bake in a 350 degree oven for 50 minutes, remove from the oven and remove the foil.
  5. Sprinkle the cheese on top and place back in the oven for 10 to 15 minutes until the cheese is completely melted.
  6. Garnish with fresh cherry tomatoes and fresh green onions, and black olives.
  7. Serve with Fresh Garden Salsa

  1. This sounds so interesting! I have only made meatloaf a few times since I'm not a huge fan but my husband LOVES it. I bet he'd really like this with rice and corn chips in it too. Pinned.
