Taco Tuesday Casserole

We love our Tex-Mex here at the cottage. Our Taco Tuesday Casserole is a giant taco in one pan. Baked to perfection with cheese, onion and crisp tortilla chips. We topped this one with some fresh avocado chunks and then of course our home canned salsa. This casserole goes together real fast and is on the table for a hungry family. 


Taco Tuesday Soup

Tuesday is Mexican food day at the cottage and we have Taco Tuesday often. My Taco Tuesday Soup is one of our favorite recipes, it is so simple to put together and really has a great flavor. Into a soup pot we add ground meat, broth, vegetables, special spices with some cheese, then its ready to go on the table. We just love this soup and it truly is our Taco Tuesday go to soup. I had made it earlier today and decided I would just share it with all of you and hope you enjoy it!


Retro Mexican Meatloaf

Our Retro Mexican Meatloaf is a perfect recipe to serve here at the cottage for all of our Mexican food lovers. I have been making this meatloaf recipe since my kids were in high school, I have changed it up a couple of times depending on the ingredients that are on hand at the time. It is great recipe to serve for a Mexican dinner with some salsa and tortilla's. It is one of our budget friendly, oldies but goodies!


Tex-Mex Enchilada Bake

  Our Tex-Mex Enchilada Bake is a great recipe to serve for a family dinner or take to a covered dish event. A well seasoned beef and vegetable casserole covered in gooey cheese and a nice salad on top. A complete meal all in one baking dish and ready to serve a crowd. This recipe is so easy to put together and in no time it can be on the table to serve the hungry folks. 


Retro Chili Pie

Our Retro Chili Pie recipe has evolved from a sack of Frito's with Chili to this baked casserole that our family loves. When I was in High School mercy me, (that was a very long time ago), we would go to the concession stand at half time and get a Tiger Special, then when my kids were in High School it was called a Bulldog Special. That special was a small bag of Frito's with a couple dips of chili poured over it a sprinkling of onions and cheese with a plastic spoon. We would walk around eating our special, which some people began to call a walking taco. We had to be in formation (I was a twirler with the band) at the half way mark of the 3rd quarter,) so we would eat fast! In our family the recipe has evolved to a casserole that we call Chili Pie.


Slow Cooker Green Chili Taco Filling

I love my Slow Cooker and the freedom it gives me to fill it full of goodness and walk away while it works its magic. This Taco Filling is a great recipe to make for a Taco Buffet, for the big game day, for a family supper or for the freezer. I have a bag of this filling in my freezer all the time for those times when we need a little extra help for a busy day. This recipe is filled with a great Tex Mex flavor and is a hearty filling for any Taco, topping for a Burrito, Tostada or added to a Queso, it is a winner every time!
