It is that time of the year when we look forward to fresh salads with fruit and delicious dressings. Today I am mixing some of my spring greens from our lettuce bucket in the garden with some fresh strawberries. I have made a delicious strawberry dressing that is perfect for this salad and then topped it with crumbled Feta Cheese. This is a great lunch salad or a great side salad for any meal. A perfect garden to table recipe for you to enjoy!

We will start with a short trip to the lettuce tub, sits right outside my kitchen door. There is nothing fresher than a great bowl of fresh spring greens for the salad.

After the strawberries have been cleaned and hulled we combine it with our olive oil, vinegar, and spices in a food processor. Pulse the processor until the strawberries are pureed. Then very slowly stream the olive oil into the mix.

Spring Greens Strawberry Salad With Strawberry Dressing

Spring Greens from our garden with fresh strawberry dressing. We add fresh strawberries to the salad and top it with crumbles Feta cheese. Just delicious!

Ingredients

Spring Greens Strawberry Salad
  • 4 to 5 cups spring greens, cleaned
  • 1-1/2 cups fresh strawberries, sliced
  • 1 cup Feta cheese, crumbles
Fresh Strawberry Dressing
  • 3 cups fresh strawberries, cleaned, hulled, and chopped
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • pinch thyme
  • 3 tablespoons honey
  • 1/3 cup extra virgin olive oil

Instructions

Spring Greens Strawberry Salad
  1. Wash and clean the spring greens. Arrange the greens on a serving platter.
  2. Chop the fresh strawberries and arrange on top of the salad greens.
  3. Top with crumbled Feta cheese.
  4. Drizzle Fresh Strawberry Dressing over the salad.
Fresh Strawberry Dressing
  1. Add all the ingredients except the olive oil to the food processor. Blend until smooth.
  2. While the food processor is running, very slowly pour the olive oil into the mix. The mix will thicken somewhat.
  3. Pour into a container and drizzle over fresh salad.
  4. Will keep in the refrigerator for 1 week. Warm to room temperature before using for best outcome.

  1. I love fresh sliced strawberries on my salads in the summer but I have always wanted to try making a strawberry dressing and never did (I just didn't like the raspberry vinaigrette with it at all). I can't wait to try your dressing recipe.
