Crock Pot Bar-B-Q Spatchcock Chicken
When the temperature is 107 degrees and our area has a red flag warning which means we can't even use an outside grill, often times new recipes are developed out of need. That is how this recipe came to be at the cottage. I had prepared my spatchcock chicken for the grill and then had no place to grill it. I came up with the idea of placing it in my buffet crock pot, which turned out to be a delicious recipe. It is full of flavor and so easy to prepare, I will be using this new recipe over and over.

How To Make
Crock Pot Bar-B-Q Spatchcock Chicken
To prepare the Spatchcock Chicken I just
cut the back out of the chicken and lay it flat.
Next place it in a nice marinate
for about 4 hours or even overnight.
Then place the chicken into a crock pot buffet style cooker.
Place 2 sprigs of rosemary and 2 sprigs of sweet basil
in the cavity of the chicken.
Brush your favorite bar-b-que sauce all over the chicken.
After the chicken is finished cooking, place it
on a roasting sheet and cover in more bar-b- que sauce.
Place in the oven for a few minutes to finish the chicken.
This Chicken is delicious and melts in your mouth!

Crock Pot Bar-B-Q Spatchcock Chicken
A very easy recipe with amazing flavor. Cooked slow in the crock pot buffet cooker. Melts in your mouth!
Ingredients
- 1 (4 pound) chicken- back cut out
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 sprigs fresh rosemary + extra for garnish
- 2 sprigs fresh sweet basil + extra for garnish
- 2 cups bar-b-que sauce ( your favorite honey bar-b-que sauce)
Marinate For Chicken
- 2 cups soy sauce-low sodium
- 1 yellow onion, chopped fine
- 3 garlic cloves, chopped fine
- 2 quarts water
Instructions
- In a large mixing pitcher mix the marinate and set aside.
- Cut the back out of the chicken, salt and pepper all over on both sides.
- Place the chicken in a large plastic container or zip lock bag, then pour the marinate over the chicken. Place the chicken into the refrigerator for at least 4 hours or overnight.
- Place the chicken into a crock pot buffet cooker, and brush it all over with bar-b-que sauce. Place the sprigs of rosemary and basil in the cavity of the chicken and lay the chicken flat breast up in the cooker.
- Place the cover on the cooker and cook the chicken for 6 hours on high or 8 hours on low. At the end of the cooking time, remove the chicken from the cooker and place it on a roasting sheet. Brush more bar-b-que sauce on the chicken. Place in a 425 degree oven for 20 minutes until the bar-b-que sauce is bubbly on the chicken skin.
- Garnish with fresh rosemary and fresh basil, if desired.
