Bacon and Tomato Quiche
We love to have a weekend brunch and sometimes friends will drop by to enjoy our latest recipes. Today I am happy to share with all of you our Bacon and Tomato Quiche. We have had great reviews from the weekend brunch group at the cottage. This is a delicious quiche with crisp bacon, cherry tomatoes and some great cheese to make a very flavorful slice of goodness!

How To Make Bacon and Tomato Quiche
We will begin by preparing pre-baking
a 9 inch pie crust.
Before baking I place a sheet of parchment over the pie curst, then I place my pie weights inside the pie shell.
Whisk the eggs, seasons, with half and half together until the mixture is completely whipped.
Add the crisp bacon pieces and cheese then mix well.
Pour the egg and bacon mixture into the pre-baked pie shell. Place the cherry tomatoes on top. Then place the pie shell in the oven, make sure to protect the pie crust edge with a protector or foil paper.
Remove from the oven to a cooling rack and let set for at least 10 minutes before serving.

Bacon and Tomato Quiche
A flavorful quiche with crisp bacon, eggs, rich cream and cheese. Perfect for brunch or breakfast.
Ingredients
- 1 store bought 9 inch single -crust
- 8 slices bacon, fried crisp, broken in pieces
- 6 large eggs
- 1 cup half and half
- 1/2 teaspoon pepper
- 1/8 teaspoon Tabasco Sauce
- 1/4 teaspoon dried thyme
- 1 cup Gruyere Cheese, shredded
- 2 cups cherry tomatoes, sliced in half
Instructions
- Prepare the pie crust, or using a store brought crust, place parchment paper over the pie crust and weigh the center down so it does not raise up during the baking process. Bake at 375 degrees for 15 minutes.
- In a hot skillet fry the bacon then drain it on a paper towel, set it aside. Break in pieces before using.
- In a large mixing pitcher, whisk together the eggs, milk, crisp bacon pieces, shredded cheese, pepper, tabasco, and thyme.
- Pour the egg batter into the pre-baked pie crust. Carefully place the sliced cherry tomatoes on top of the batter.
- Place a protector over the edge of the crust or foil paper. Bake at 375 degrees for 40 minutes.
- Remove from the oven to a cooling rack, let set for at least 10 minutes before serving.
