Tex-Mex Breakfast Enchilada's
Tex-Mex food is a staple here at the cottage, we have our Mexican food at least once a week. One thing that I really love about our Tex-Mex Breakfast Enchilada's is the fact that we can freeze them, in a baking dish or for single servings for a great grab and go breakfast. The Enchiladas are perfect for a brunch with friends and family. This recipe is a very easy one to put together with a delicious finish!

How To Make Tex-Mex Enchilada's
Brown the sausage in a very large skillet.
Beat the eggs and seasons together until completely mixed.
Add the eggs to the sausage mix.
Add the shredded cheese to the sausage and egg mixture.
Warm the tortillas and place some to the sausage mixture in the center, then roll the tortilla and place it in the 9 X 13 baking dish seam side down.
Place all the enchilada's seam down, in a 9 X 13 baking dish.
Pour the enchilada sauce over the top of the enchilada's.
Sprinkle the shredded cheese mix on the top of the enchilada's.
Bake the enchilada's in the oven for 25 minutes.

Tex-Mex Breakfast Enchilada's
A great blend of sausage, eggs and Tex-Mex flavors to create a fantastic breakfast enchilada that all friends and family will love.
Ingredients
- 1 pound hot breakfast sausage, browned
- 8 medium to large eggs, beaten
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 cup half and half
- 1 cup salsa, mild or hot
- 2 cups Mexican Blend Cheese, shredded, divided
- 8 regular size flour tortillas, warmed
- 2 (10 ounce) cans enchilada sauce
- 1 bunch fresh green onions, chopped for garnish
Instructions
- In a large heavy skillet, brown the sausage.
- Beat the eggs and add the salt, pepper, cayenne, chili powder and cumin, beat until completely blended, then add the half and half and continue to beat well.
- Add the egg mixture to the browned sausage and stir well until the egg has cooked. Add the salsa to the mixture and stir well. Stir in 1 cup of the cheese mixture.
- Warm the tortilla's and keep them warm with a warm towel. Place some of the sausage and egg mixture down the center of the tortilla and roll it. Place the rolled tortilla seam side down, into a 9 X 13 baking dish.
- When all the tortilla's are rolled and in the baking dish, spoon the enchilada sauce over the tortilla's and the sides of the dish.
- Sprinkle the remainder of the cheese down the center and on top of the enchilada's.
- Bake at 350 degrees for 25 minutes.
- Garnish with fresh green onions before serving.
Notes
This recipe is good frozen in a baking dish or in individual servings for up to 3 months.
Garnish the top of the baked enchilada's with
chopped fresh green onions.
