Roasted Lemon Chicken With Mini Potatoes
This is a delicious one pot dinner recipe. If you like the chicken and lemon flavor combination, then you will love the addition of these lemon flavored mini potatoes. Then we add some olives to the mix and it is a big hit here at the cottage. It has quickly become one of the favorites with family and friends.

Roasted Lemon Chicken With Mini Potatoes
In a large stew pot, bring the chicken broth to a boil. Add the mini potatoes, garlic cloves, olives, 2 lemons cut into wedges, black pepper and thyme. Boil the potatoes until just tender. Remove to a holding bowl. Retain all of the liquid in the stew pot.
Slice the chicken tenders into cubes. Place the cubed tenders into a mixing bowl. Toss the tenders with salt, pepper, thyme,
and 4 lemon wedges.
Roast the chicken tenders and lemon wedges on a foil lined baking sheet. Roast for about
12 to 16 minutes turning
once during the roasting time.
Place the roasted chicken into the boiling liquid in the stew pot. Bring the mixture to a boil and add the potatoes, olives, and lemon wedges back into the mixture. Let simmer for 10 minutes.Place the potatoes and chicken
onto a large serving platter.
Garnish with parsley and serve.
Serve some of the liquid on the side to drizzle over the chicken and potatoes.
