Mac N Chicken

Who doesn't love a great Mac N Cheese so we are combining that with chicken and a lot of flavor to make this delicious Mac N Chicken.  This is a dish that can be perfect for a weeknight or dressed up for a company dinner. I had so much fun developing this recipe and sure hope you enjoy it as much as we did.

Ingredients
2 pounds Chicken Tenders, cut in 2 inch pieces
3 cups dry macaroni
9 ounces fresh spinach
2 tablespoons Extra Virgin Olive Oil
3 tablespoons garlic, minced
4 tablespoons capers
1 teaspoon salt
1 teaspoon pepper
2 teaspoons dried basil
1 teaspoon oregano
1 cup half and half or heavy cream
1 stick butter
2 cups Parmesan shredded
Directions
Season the chicken with salt, pepper, basil and oregano
Heat a heavy skillet and add the olive oil, add the seasoned chicken and cook until done and browned, add the garlic and capers, mix well and set Chicken aside to rest
Cook the Macaroni according to package directions for 6 minutes only and drain, add the pasta back to the saucepan and add the spinach while the pasta is still hot, mix well until the spinach is wilted cover the pan and set aside
In a medium sauce pan melt the butter then add the heavy cream and cook on medium heat for 10 minutes stirring, then add 1 1/2 cups Parmesan and mix well, remove from heat
Add the chicken to the macaroni and spinach then add the sauce and mix well
Pour into 8X11 casserole dish and top with 1/2 cups Parmesan
Bake at 425 for 20 to 25 minutes

This freezes well for up to 3 months
