I love coming home after a busy day to a great soup simmering away in the Slow Cooker.  This is a real simple and flavorful Potato Soup that we just love, a real stick to your ribs comfort soup.  We just love to cozy up for the evening with this awesome bowl of soup.

Slow Cooker Cheesy Potato Soup

Slow Cooker Cheesy Potato Soup

Delicious cheesy potato soup, with crispy bacon to kick the flavor. Cooking in the Slow Cooker all day, ready for you when you come home for dinner!

Ingredients

  • 1/2 pound bacon
  • 1 (16 ounce) bag Frozen Southern Style Hash Brown Potatoes
  • 4 cups chicken broth
  • 1 (10 ounce) can cream of chicken soup
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 bunch green onions, chopped
  • 1 (8 ounce) package cream cheese, softened
  • Dash cayenne pepper to taste
  • Salt and Pepper to taste

Instructions

  1. In a medium size skillet fry 1/2 pound bacon until crisp, reserve the rendered fat and drain the crisp bacon on a paper towel
  2. Sauté the chopped yellow onion in the bacon fat, remove the onion and reserve the remaining fat
  3. In a mixing bowl mix the chicken broth and chicken soup until blended well
  4. In a large 6 QT Slow Cooker, combine the hash browns, 1/2 of the crisp bacon, the sautéed onions, minced garlic, and 1 tablespoon of the rendered bacon fat, mix well
  5. Add the chicken broth and chicken soup mix , cayenne pepper, salt and pepper, mix well
  6. Cook in the Slow Cooker on low for 4 1/2 hours
  7. Add the softened cream cheese and mix well
  8. Continue to cook on low for another 30 minutes
  9. Keep on warm until ready to serve
  10. Garnish with the chopped green onions and remaining crisp bacon
