Cajun Fried Okra

We grow okra in our garden every year so this is a perfect recipe for us to enjoy. Our family has always enjoyed fried okra and is often  a side dish for a family dinner or a great appetizer.  Okra is one of the high fiber foods that is really good for you and we love it here at the cottage. This recipe is full of flavor and can be seasoned to your taste, we like it spicy. I usually make a double batch of this recipe because it is great to snack on the next day.

Let's Make The Cajun Fried Okra!

Cajun Fried Okra

Ingredients
6 cups fresh okra, sliced
2 cups all-purpose flour
1 cup yellow cornmeal
1 teaspoon salt
1/2 teaspoon cayenne pepper
2 tablespoon Cajun seasoning or (to your taste)
2 cups buttermilk
vegetable oil, enough to cover the bottom of your skillet and 1/4 of the way up the side.
Directions
In a large mixing bowl, stir together the flour, cornmeal, salt, cayenne pepper and Cajun seasoning.
In another mixing bowl pour in the buttermilk.
Toss the sliced okra into the flour and cornmeal mixture, then drop it into the buttermilk.
From the buttermilk drop the okra back into the flour and cornmeal mixture, then shake off the excess.
Heat the vegetable oil in a heavy iron skillet to hot.
Drop the battered okra into the hot oil and fry until golden brown turning often to ensure it does not burn. Don't over crowd the skillet so it will cook evenly.
Remove from the skillet and drain on a paper towel until ready to serve.

  5. I love your recipes but they are too large for the few people I feed. Any chance you can publish some for two or three people? I especially like the squash casserole and the okra. I just don't like to waste food.
