Old Fashioned Peach Bars


We love peach season and the wonderful recipes that we can create from the delicious peaches. This is a recipe that is made with fresh or frozen peaches so that you can enjoy these tasty treats the year round. We have enjoyed these bars at family gatherings, church pot luck dinners and around our table, they are a delicious treat. The flavor of these bars bring me back to my Grandmothers table when she would bring these bars in to serve at a family dinner, great food memories, I can still see that smile on her face. She loved to cook special treats for her family and friends, and so do I.

Let's Make These Bars

Old Fashioned Peach Bars
Miz Helen's Kitchen
Ingredients
8 to 10 cups peaches, pitted, peeled and chopped
2 cups brown sugar
4 tablespoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
3 tablespoon orange juice
2 teaspoons orange zest
3 cups all purpose flour
1 cup old fashioned oats
2 teaspoons baking powder
1 teaspoon salt
1 cup cold butter, small cubes
1 egg
1/2 cup sour cream
2 teaspoons vanilla extract
Directions
Pit, peel and chop the peaches.
Place the peaches in a large mixing bowl.
Add 1 cup brown sugar, cornstarch, cinnamon, nutmeg, ginger, orange juice and zest, stir until completely blended.
Set the peaches aside.
In a separate mixing bowl, stir together 1 cup brown sugar, flour, oats, baking powder, and salt. Add the butter and with a pastry blender or a fork work the mixture until is is crumbly.
In a mixing pitcher, mix the sour cream, egg and vanilla extract.
Add the sour cream and egg mixture to the flour mixture and mix until completely combined.
Line a 9X13 baking dish with foil and then spray it with a oil and flour baking spray.
Place 3/4 of the flour mixture into the prepared 9X13 baking dish. 
Press the mixture until it is smooth and very firm in the bottom of the baking dish.
Spoon the seasoned peaches on top of the crumb base and completely cover the crumb base.
Sprinkle the remainder of the flour mixture on top of the peaches.
Bake in a 350 degree oven for 50 to 60 minutes until lightly brown on top and set in the center.
Let the Bar completely cool before you remove it from the baking pan.
After the bar is completely cool remove it from the baking pan to a cutting board.
Let the bar cool to the touch before cutting.
Cut the bar into serving pieces.
Refrigerate the left overs (if there are any).

  1. Peaches are our favorite fruit. We went to SC and got 21 boxes for friends and relatives the end of July. They are the sweetest peach I think I have ever eaten.

    I gave a small loaf of Summer Harvest Bread to our great granddaughter's teacher on Friday. She LOVED it!!!
