Our Marinated Veggie Salad is a fantastic salad recipe that is limited only by your imagination. I love to keep some of this salad in the refrigerator during a busy week, Just take some from the jar, spread it on some greens, add a little feta and it is a delicious salad. The jar of marinated veggies will easily go into any picnic basket to give you a great side for the special picnic. This will also be a great bowl of salad for a covered dish, or a side dish for a family dinner. This is a great make ahead recipe that you will want to use over and over. We love this recipe and you can find it in my refrigerator most of the spring and summer for sure.

Marinated Veggie Salad

Ingredients
For The Dressing
3/4 cup sugar
1 cup apple cider vinegar
1/2 cup olive oil
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
The Veggies
3 cups celery, chopped, tiny
1 cup red onion,chopped, tiny
1 red bell pepper, chopped,small
1 (pound) asparagus, trimmed and steamed
1 (16 ounce) bag frozen green peas, thawed
1 (4 ounce) jar pimentos, chopped
Directions
In a small saucepan bring the sugar, cider vinegar, salt, pepper, cayenne, dried parsley, and dried basil to boil and boil for 1 minute.
Remove from the heat and pour in the oil.
Set aside and let cool to room temperature.
In a very large mixing bowl place the chopped celery, chopped onion, chopped bell pepper, trimmed, chopped and steamed asparagus, thawed green peas and pimentos. Mix well.
Pour the room temperature dressing over the salad and mix well.
Cover with plastic wrap and refrigerate for 24 hours.
Spoon into clean glass jar with a tight seal for keeping in the refrigerator.
Recipe Tips
Serve on salad green of your choice and add a little feta if you like for a wonderful salad or enjoy in a small bowl with any additions.
