Irish Mashed Potatoes -Colcannon
This Irish Mashed Potato dish or the Irish call it Colcannon, is my most favorite of mashed potatoes. This is a very classic recipe and is rich, creamy, and buttery. We have added some bacon and fresh green onions, to put it over the top! The flavor of this recipe is fabulous and I could really make a meal from this one dish. Our family will line up for a serving or two of these special potatoes.

How To Make Irish Mashed Potatoes - Colcannon
I am starting the recipe with a trip to the winter garden and found the perfect small cabbage head for this recipe.
Chop the cabbage in strips, fresh cabbage smells so good.
Drop the cabbage strips into a boiling pot of salty water.
While the cabbage is cooking, cook the bacon until crisp. Remove the bacon to a holding platter and
when it is cooled, then chop it.
Remove the cooked cabbage to a holding platter.
Place the potatoes into the cabbage water,
and add more water if necessary.
Boil until tender.
Drain the potatoes, place them back into the cooking pot.
With an old fashioned potato masher, mash the potatoes.
Stir in the half and half plus the melted butter.
Add the fresh green onions and stir well.
Stir in the chopped bacon.

Irish Mashed Potatoes - Colcannon
This is a very classic recipe and is rich, creamy, and buttery. We have added some bacon and fresh green onions, to put it over the top!
Ingredients
- 1 small cabbage head, large slice strips
- 3 cups water
- 8 slices bacon, cooked crisp and chopped
- 5 medium white Irish potatoes, peeled and chopped
- 1-3/4 cup half and half
- 1 stick butter, divided
- 1-1/2 cups fresh green onions with tops, chopped small
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- In a heavy stew pot, heat 3 cups water and 1 teaspoon salt, then bring the water to boil. Add the cabbage strips to the boiling water and reduce the heat to low and cook 10 minutes with the lid on.
- While the cabbage is cooking, cook the bacon until crisp in a medium skillet. Remove the bacon from the skillet and place on a holding platter, then set aside.
- When the cabbage is tender, remove the cabbage from the water with a slotted spoon to a holding bowl and set aside.
- Place the potatoes into the stew pot with the same cabbage water and bring to a boil. Reduce the heat to medium low and cook about 10 minutes or until tender. Drain the potatoes and return them to the stew pot.
- In a small sauce pan melt the stick of butter.
- With and old fashioned potato masher, mash the potatoes. Then add the half and half and 1/2 of the melted butter, salt and pepper. Stir the potatoes until completely blended.
- Add the cooked cabbage to the potatoes, mix well, then add the fresh green onions and the chopped bacon, mix well. Add the potato mix to a serving bowl.
- Just before serving drizzle the remainder of the melted butter over the top of the potatoes and garnish with fresh chopped green onions and chopped bacon.
