Orzo Spinach Salad With Honey Lemon Dressing
I really enjoy the combination of the Orzo pasta with the fresh vegetables in this salad. The Honey Lemon Dressing is a favorite of mine and helps to make this salad very special. I love having a great salad recipe like this as it will be a delicious side dish for just about any family style meal or if you want to add a little chicken it will make a great meal. It takes very little time to prepare this salad and can be prepared the day before. I recently carried this salad to a friends luncheon that she hosted, everyone just loved the salad and I hope you enjoy it as well.

How To Make Orzo Spinach Salad
With Honey Lemon Dressing
I like to make the dressing first, then set it aside so the
ingredients have a chance to fuse together.
Prepare the Orzo according to package directions, drain and set aside.
Cut the cherry tomatoes in halve then add to the Orzo.
Chop the red onion and add it to the
Orzo and tomatoes.
Add the baby Spinach to the other ingredients.
Stir all the ingredients together and
then add the dressing.

Orzo Spinach With Honey Lemon Dressing
Flavorful fresh vegetables added to Orzo Pasta, combined with a creamy Honey Lemon Dressing. A delicious salad for any occasion.
Ingredients
- 8 ounces orzo pasta, cooked according to package directions.
- 2 cups cherry tomatoes, cut in halve
- 1 cup red onion, chopped fine
- 2 cups baby spinach
- 1 cup crumbled feta cheese
- Dressing
- 2/3 cup olive oil
- 1 lemon juiced and zested
- 1/3 cup red wine vinegar
- 1 tablespoon honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon thyme
Instructions
- For The Dressing
- In a mixing jar, pour in the olive oil, lemon juice and zest, vinegar, honey, salt, pepper, and thyme. Place the lid on the jar and shake until the dressing is creamy.
- For The Salad
- Cook the orzo according to box directions, drain and cool, then set aside.
- In a large mixing bowl, add the orzo, cherry tomatoes, red onion, spinach.
- Drizzle the dressing over the salad and toss. Add the Feta cheese and toss to finish. Refrigerate until ready to serve.
This Salad is ready to serve, it looks so good!
A really great salad for any occasion.
