Green Chili Chicken Enchilada Casserole
Our Green Chili Chicken Enchilada Casserole recipe is a true Tex-Mex creation. We are Tex-Mex fans here at the cottage and our friends and family have fell in love with this recipe.
It is so easy to put together, I even use some of my frozen chopped chicken that I keep on hand. This is a great casserole to serve for company and it a very special casserole to take for a pot luck event. A big plus for this recipe, it freezes well for up to 3 months.

How To Make
Green Chili Chicken Enchilada Casserole
In a large mixing bowl we will add the sour cream, chicken soup, and green chilis.
season with the taco seasoning.
Add the onion and the seasoned chicken. Mix all the ingredients together until completely incorporated.
Spray a 9X13 baking dish with cooking oil. Spread 1/2 of the chicken mixture on the bottom of the baking dish. the quartered corn tortillas.
Brush the enchilada sauce on top of the tortilla quarters.
Then repeat the layer with the remainder of the chicken mixture and top with the tortilla quarters brushed with the enchilada sauce.
Cover the top of the casserole with the shredded Mexican Cheese Mix.
Bake at 350 degrees for 30 to 45 minutes.
Move to a cooling rack for 10 minutes.
Garnish with fresh green chopped onions.
Recipe
We just add some chopped lettuce, Roma tomatoes and, fresh chopped green onions. This is ready to serve!
