Apple Doodle Cupcakes With Caramel Frosting

We love Snickerdoodles here at the cottage, it is one of the more popular cookies with our family. I have been working on this cupcake recipe and have developed it around our love for the Snickerdoodle cookies. The cupcakes have the wonderful flavor of a Snickerdoodle with little bites of apple, then topped with a rich caramel frosting. These cupcakes will be a favorite here!

I had a very interesting experience getting these special cupcakes to this point. You will have to read the little story about the "Cupcake Journey".

The Cupcake Journey
Living in the country is a very simple and serene life, however with that comes inconveniences that happen at the most inopportune times.  I had the last batch of the cupcakes in the oven with 10 minutes left on the baking time, and the good ole rural electric lost power! This is the fun part, that moment of decision "Oh No What To Do"? I made a decision to leave the oven door closed and kept checking on them with a flashlight through the glass on the oven door. I left them in the oven for 20 minutes, took them out and did the toothpick test, they were perfect! The power came back 3 hours later, wonderful country life.

Frost The Cup Cakes

Apple Doodle Cupcakes With Caramel Frosting
Miz Helen's Kitchen
Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1 cup unsalted butter, softened
1 3/4 cups sugar
4 eggs
2 teaspoons vanilla extract
2 cups gala apples, peeled and finely chopped
1 cup whole milk
Directions
In a separate bowl, stir together the flour, baking powder, salt and cinnamon.
In a large electric mixing bowl, combine the butter and sugar, beat until light and fluffy. Add the eggs one at a time, beating after each addition. Add the vanilla and blend well.
Gradually add the flour a little at a time and alternate with the milk.
Fold the apples into the batter.
Place liners into a cupcake tin.
Fill the cupcake liners 3/4 full.
Bake at 350 degrees for 20 minutes.
Remove to a cooling rack and cool completely before frosting.

Caramel Frosting
Miz Helen's Kitchen
Ingredients
1/2 cup unsalted butter
1/4 teaspoon salt
1 cup dark brown sugar, packed
1/4 cup milk
1 teaspoon vanilla
3 to 4 cups confectioners' sugar
Directions
In a heavy sauce pan, melt the butter.
Stir in the salt and the brown sugar.
Bring to a boil, stirring constantly.
Cook on low for 2 minutes, until the sugar is melted.
Add the milk and bring to a boil, then remove from the heat.
Cool to lukewarm then add the vanilla.
Gradually add the confectioners sugar.
Adjust the consistency with more confectioners sugar or more milk.

Frosted and Ready To Serve
