Salisbury Steak and Gravy

Some number of years ago my husband and I went to a little Mom and Pop restaurant that had the best food. One of our favorites was their Salisbury Steak, which we frequently ordered. Long after they had closed their restaurant we still talked about the delicious Salisbury Steak that we would get there. I began a quest to try and make a Salisbury Steak that would be very close to the one we enjoyed so much and I finally got there. This is a great recipe that is so full of flavor and a gravy that sends it over the top. Now we can enjoy the steak along with all the wonderful memories we have from those days in our life.

Salisbury Steak And Gravy
Miz Helen's Kitchen
Ingredients
2 pound's ground chuck
1 cup onion, chopped very fine
3/4 cup Panko breadcrumbs
2 egg
2 tablespoons Worcestershire Sauce
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
1 tablespoon dried Italian Seasoning
1 tablespoon dried parsley
2 tablespoon butter
The Gravy
2 tablespoons butter
16 (ounces) sliced mushrooms
2 teaspoons thyme
3 tablespoons flour
1-1/2 cups Beef Broth
Directions
The Salisbury Steak
In a mixing bowl, mix together the ground chuck, onion, breadcrumbs, eggs, Worcestershire Sauce, salt, pepper, cayenne, Italian Seasoning, and butter.
Form 8 oval shaped patties.
Melt 2 tablespoons butter in a large hot skillet and brown the patties on each side, cooking them about 5 minutes on each side. When nicely browned, remove from the skillet to a platter and set aside.
The Gravy
In the same skillet, add the 2 tablespoons butter and the mushrooms.
Cook the mushrooms for 8 to 10 minutes, then add the thyme and stir.
Sprinkle the flour over the mushrooms and stir it in, then gradually stir in the beef broth a little at a time. Cook the gravy to allow it to thicken. Add salt and pepper to taste.
Return the patties to the skillet and make sure the gravy and mushrooms are covering the patties. Cover the skillet and cook on low for about 30 minutes until the patties are cooked through.
Serve the patties covered with the gravy.
