  • 2 tablespoons vegetable oil
  • The Sauce
  • 1 green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 2 (16 ounce) cans diced tomatoes
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon dried basil

Instructions

  1. Cut the sirloin strips into 4 pieces and pat dry.
  2. Generously salt and pepper the sirloin on all sides.
  3. Sprinkle the flour on all sides of the meat and pat the flour into the meat.
  4. In a mixing pitcher, mix the bell pepper, onion, diced tomatoes, salt, cayenne and basil, then set aside.
  5. Turn the instant pot to sauté, until the pot registers hot.
  6. Add the oil and let heat for a moment, then add two of the pieces of meat and sear on both sides. Remove the seared meat to a holding platter and set aside.
  7. Sear the other 2 slices of meat in the same manner.
  8. Once all 4 of the pieces of meat are seared. Return to the pot and pour the vegetable sauce over the meat.
  9. Secure the lid.
  10. Reset pot to Meat/Stew or high pressure; set the timer for 30 minutes with the pressure valve closed.
  11. Once the timer goes off let the pressure release naturally for 15 minutes.
  12. Twist valve for quick release to remove the remaining pressure.
  13. When all the pressure is released remove the meat to a platter and serve the sauce on top or on the side.
  14. Great served with mashed potatoes or rice.
