Our recipe for antipasti salad is a very delicious blend of great ingredients and seasons. This salad recipe has been in our family for a very long time and depending on what is  in the refrigerator the recipe may change from time to time. This is a great salad to have in the refrigerator on a hot summers day and is great served as a lunch or supper meal. We  have taken this salad to many a pot luck dinner or picnic and it is always a hit.

How To Make A Great Antipasti Salad

I like to use a short Rotini pasta, the flavors and the dressing will just nestle in the little ridges of the Rotini. I cook it according to directions on the box and then drain it and set it aside.

Add the pasta to a very large mixing bowl.

To the pasta add, green stuffed sliced olives, roasted red peppers, black sliced olives, red chopped onions, green chopped bell pepper, chopped Roma tomatoes and thinly sliced salami.

Place all the ingredients for the dressing into a fruit jar,
 close the lid and shake it!

Toss the cheese into the pasta mix, 
then drizzle the dressing over the salad, toss and seal the top of the bowl. Refrigerate until ready to serve.

Antipasti Salad

The flavors of this salad recipe are amazing! Great for pot luck, picnic or a family gathering!

Ingredients

The Salad
  • 1 pound short Rotini pasta, cooked according to box directions and drained.
  • 1 cup large green stuffed olives, sliced
  • 1 cup black olives, sliced
  • 1 cup red onions, chopped
  • 1 cup roasted red peppers,(from jar), chopped, do not drain
  • 1 cup green bell pepper, chopped
  • 1 cup Roma Tomatoes, chopped
  • 7 (ounces) salami, thinly sliced, chopped
  • 2 cups mozzarella cheese, shredded
Antipasti Salad Dressing
  • 1 cup olive oil
  • 1 cup red wine vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

The Salad
  1. Cook the Rotini according to package directions and drain, then set aside.
  2. Place the cooked pasta into a very large mixing bowl. Add the green olives, black olives, red onions, roasted red peppers, green bell pepper, tomatoes, salami and mozzarella. Toss together until completely mixed together.
  3. Drizzle the dressing over the salad. Place a lid on the salad and place in the refrigerator. Refrigerate for at least 3 to 4 hours, before serving.
Antipasti Salad Dressing
  1. Place the olive oil, vinegar, oregano, garlic powder, sugar, salt and pepper into a fruit jar or a shaking jar with a lid.
  2. Place the lid on the jar, and shake until completely blended.
  3. Drizzle over the salad.
