Our Winter Roasted Vegetable Salad is packed full of delicious vegetables and fruits. We start with a bed of fresh greens and lay in the roasted brussels sprouts and butternut squash. With an addition of mandarin oranges and pomegranate seeds, topped off with a lovely Honey Lemon Dressing and a garnish of Fetta Cheese. This salad will complement any special meal.

How To Make Winter Roasted Vegetable Salad

Peel the butternut squash, 
 with a large spoon remove the seeds.

Chop the squash into 2 to 3 inch cubes.

Place the chopped squash into a mixing and toss 
with olive oil, salt, pepper and thyme.

Roast the butternut squash at
 375 degrees for 20 to 25 minutes.
In a large mixing bowl, toss the cleaned brussels sprouts with olive oil and seasons.
Lay the cleaned and seasoned brussels sprouts on
 a parchment lined roasting pan. 
Roast in a 375 degree oven for 20 to 25 minutes.
Release the pomegranate seeds into a bowl.
These elements for the salad can be refrigerated and used for any salad or side dish. They are wonderful to have on hand.
Mix the Honey Lemon Dressing
In a large mixing bowl toss together 8 cups of fresh greens.
Lay the fruits and vegetables on top of the greens on your serving platter.

Recipe
Drizzle the dressing over the salad and garnish with Fetta Cheese. This salad is ready to serve.
This salad can be served with any meal or is great for a salad luncheon or a covered dish event.
