Fresh Apple Cake

It has been very cold here and Leonard came in from outside and asked me if I would bake him one of my Fresh Apple Cakes, it really sounded pretty good to me to. Would you like a piece of cake and a cup of tea? I will just sit down and have a piece with you.

Fresh Apple Cake
Miz Helen's Kitchen

11/2 cups oil
2 cups sugar
3 cups flour
2 cups fresh peeled graded apples
4 eggs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla
1 1/2 teaspoon soda dissolved in a little water
1 cup pecans chopped
With a mixer, mix the sugar, flour, oil, eggs one at a time, and the peeled graded apples. Mix in the salt, cinnamon, vanilla and the soda dissolved in water. Fold in 1 cup chopped pecans. Pour into  a greased and floured  9X13 baking dish. Bake 350 degrees 40 to 50 minutes. While cake is still hot, pierce the cake gently with a fork and pour the cooled glaze over the cake.
 Glaze
1 cup orange juice
1 cup sugar
Zest of 1 orange
Boil the above mixture until the sugar is dissolved. Cool and pour over hot cake
The longer this cake sits the more moist it is. We like to serve it with a bit of whipped cream or a dip of Blue Bell.
