I am so excited that you are here today to help mark our Third Year of Full Plate Thursday. On January 6, 2011 we began this journey together and it has been awesome! Every week we have gathered around the table to share our food and fellowship with each other. I cannot begin to tell you how special each of you have been to see you and share with you every week. I look forward to continuing our journey together as we begin Year Four, you truly are The Greatest Cooks On The Planet! I wanted to offer you a special slice of this Raspberry Sheet Cake to help us celebrate today, Thanks so much for coming to the party!

Background Story For Full Plate Thursday
When we were young and just starting out in life sometimes we did not have a lot of money. Most of our friends were having to stretch the dollars at the end of the month just like us. My girlfriends and I decided that we would pool our food for some of the evening meals right before payday... the last week of the month. I have some of the fondest memories from those days. We would all bring our food together and we had some great food and great fellowship. We would get the food on the table and everything ready, someone would bless the food and then the hostess would say "come fill your plate".

    Today I've brought my son's frugal, easy Pico de Gallo (Salsa Fresca) recipe. (It's great when they grow up and start cooking on their own!) It's a favorite of mine, and it's so healthful, too!
