Mac N Pimento Cheese

When my friend Amy Green of Simply Sugar and Gluten Free came out to visit me one weekend, she said what is the secret in your pantry? I told her to look in the pantry and see if she could figure it out, when she finished her inventory, she declared it was the pimento, because I had more pimento on my pantry shelf than they have in the super market. (We laughed and laughed) She was right I am apt to put pimentos in anything, we just love them. Another dish we love is Mac N Cheese, so why not make a dish that made both of these a star. Hope you love it as much as we do.

Mac N Pimento Cheese



Mac N Pimento Cheese

Ingredients
5 cups uncooked large elbow macaroni
For the Sauce
1/4 cup flour
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
1/4 cup butter
3 tablespoons Worcestershire Sauce
3 cups whole milk
1 1/2 cups sharp cheddar cheese, shredded
1 1/2 cups Velveeta Cheese, shredded
1 cup pimento's, chopped
Directions
According to package directions, in a large pasta pot cook the macaroni for 9 minutes, to al dente.
Drain the macaroni and keep warm and return it to the large pasta pot and set aside.
In a small bowl add the flour, salt, and peppers, then mix well.
In a medium stock pot, cook the seasoned flour and butter until it is smooth and beginning to bubble.
Whisk in the milk and whisk constantly until the mixture is smooth.
After the flour, butter and milk mixture is smooth add the cheese,  Worcestershire and pimentos, stir constantly until all the cheese is melted.
When the cheese is melted then pour the cheese mixture over the pasta and mix well.
Pour the pasta and cheese mixture into a buttered 9X13 baking dish.
Bake at 350 degrees for 20 to 30 minutes, until the cheese is starting to bubble in the middle of the dish.
Optional topping:
Cover with buttered Panko Crumbs before baking to give a crispy top.
Add Ham or Cooked Hamburger to dress it up

  5. That looks and sounds fabulous! I'm curious now though, where you get your pimentos. I have a recipe (and now 2) that I want to make, but couldn't find them at my local grocer.

    1. Hi Adelina,
      We just buy them at the super market here, but if you can't find them you might check on line to order them. You might use roasted red pepper as a substitute, it will change the flavor a little but not a lot. I sure hope you can find them. Thanks for stopping by and have a great week!

  12. Of course, I love pimentos. It's one of the must have ingredients in my tartar sauce...wouldn't be the same without it. I love that you've taken the idea of pimento cheese and turned it into mac & cheese.
