We love to go to the State Fair Of Texas, one of the reasons I love the fair is the food. Corn Dogs are one of the special treats that I always have at the fair. This year the fair has been cancelled and we will not be able to enjoy our wonderful corn dogs from the fair. My corn dogs are not the same as the fair, but they will run them a close second and we really have enjoyed these corn dogs. If your fair is cancelled this year, you to might enjoy having a corn dog, it sure makes you feel better and brings back some awesome memories!

We will sure miss walking on to the fair grounds and greeting Big Tex as he welcomes all the visitors to the fair. But most of all we are missing all the fair food. We have made our own Corn Dogs to share with you today!

We Start Our Corn Dog
With The Batter and Let It Rest While 
We Take Care Of The Wieners

First We Make Sure The Wieners 
Are Dry So The Batter Will Stick

When They Have Been Dried
Insert The Baking Stick 
Into The End Of The Wiener.

Dip Them In The Batter and Fry Them In Deep Oil
Until They Are Golden Brown

When Browned, Remove The Corn Dogs From The Oil and Drain On A Cooling Rack

Ingredients
2 quarts neutral frying oil
8 Wieners
1 (8.5-ounce) box corn muffin mix (Jiffy)
3/4 cup buttermilk
1 large egg, beaten
Directions:
Pour the oil into a heavy dutch oven and heat the oil on medium heat to 375 degrees. Use a deep fry thermometer, to get the correct temperature.
In a medium mixing bowl or pitcher mix the corn muffin mix with the buttermilk and egg. After it is mixed pour it into a large glass to help make it easier to dip the corn dog. Set aside and let rest.
Make sure that all your wieners are very dry, the batter won't stick to the wiener if it is wet.
Insert the baking stick into the end of the dry wiener.
When the oil has reached 375 degrees, dip the wiener into the batter, letting the extra fall back into the glass.
With tongs ease the corn dog into the hot oil.
Cook for 4 to 5 minutes or until golden brown.
Remove the corn dog from the oil and place on a cooling rack and let drain.
Serve the corn dogs with yellow mustard.
Enjoy!
