Rosemary-Orange Cornbread Bites
Our Rosemary-Orange Cornbread Bites are a delicate cornbread mini muffin with a fabulous unexpected flavor. This is a very simple muffin recipe to make and it returns amazing results. I have blended a sweet cornbread with fresh rosemary and a orange zest to bring this flavor that we just love. These mini cornbread bites can be served to compliment any meal, or as an appetizer, with honey on the side.

How To Make Rosemary-Orange Cornbread Bites
Whisk all the ingredients together.
Scoop the batter into a prepared mini muffin baking tin.
Bake in the oven until just turning brown on top.
Cool on a rack in the baking tin before
removing the muffins from the baking tin.
to cool completely before serving.

Rosemary-Orange Cornbread Bites
This delicious mini muffin is a very simple recipe with a blend of rosemary & orange zest. Compliments any meal, or appetizer.
Ingredients
- 1 cup flour
- 1 cup yellow cornmeal
- 1/4 cup plus 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- dash salt
- 1 cup half & half
- 1 large egg, lightly beaten
- 1/4 cup vegetable oil
- 1 tablespoon fresh rosemary, chopped fine
- Zest of 1 large fresh orange
- Baking spray for the baking tin
Instructions
- In a medium mixing bowl whisk the flour, cornmeal, sugar, baking powder, baking soda, and salt.
- In a mixing pitcher, mix together the egg, half & half and oil. Whisk the egg mixture into the flour mixture, mix until completely combined.
- Fold in the chopped fresh rosemary and fresh orange zest.
- Scoop the batter into a mini muffin pan that has been prepared with a baking spray.
- Bake in a 375 degree oven for 12 minutes or until the centers test clean and the tops are golden. Remove the baking tin to a cooling rack and allow to cool in the tin before turning the muffins out. Turn the muffins out of the tin onto a cooling rack.
Pass the cornbread, these won't last long!
Just add a little butter, these will compliment any meal.
