Garlic Butter Cod With Caper Sauce

  Garlic Butter Cod With Caper Sauce is a delicious recipe that is so easy to prepare and can be on the table in no time. The fillet is dredged in a season mix, then cooked in a garlic butter sauce. To top this special fish we use a delicious caper sauce. We live inland so seafood is a real treat for us. Rarely do we have it fresh, it is most usually frozen, this is a great recipe for frozen fillets.


Retro Salmon Patties

My Mother always kept a can of Pink Salmon in the cabinet. If we had unexpected company you knew the can of Salmon was coming down and Salmon Patties would soon be on the table. We lived inland so fresh fish was Catfish, Crapie, and mostly any other fish caught in the river or lake, fresh fish like Salmon would not have been on our table and wasn't. I love Salmon Patties, and every once in a while I really get hungry for them. There are hundred's of recipes for Salmon Patties, but this is our families recipe and I am happy to share it with you today. When I start making these patties, I can remember my mother standing in the kitchen with her apron on top of her "house dress" with her hair ever so carefully curled. A great memory to enjoy as I make up these delicious Salmon Patties with my apron over my yoga pants and top, wearing my running shoes, time move's on, but our Salmon Patties remain the same.


Lemon Caper Salmon

We live a long way from a stream where wild Salmon are running and wild Salmon are the catch of the day. Most of the Salmon we have is frozen and occasionally we will have fresh Salmon, but it is very expensive. The Salmon that I am using for this recipe today was frozen wild Salmon. I love this recipe with a great marinade of lemons and caper's that goes on top of the fillets to make this flavorful fish. This is a very simple, healthy recipe and for us a very special meal.


Nana's Tuna Salad

When I was a young girl I remember going to my Mothers pantry and there would always be a can of Tuna and a can of Salmon. She said that was her emergency food in a can, and so it was. More than once I would see her go for those cans when unexpected company would stop by or when she needed to make a nice meal in a hurry. One of the recipes that I loved and still do to this day is the Tuna Salad. Although I have changed the recipe through the years to meet our families taste it is still the basic recipe that was passed on to me. So when you go to my pantry today there will always be a can of Tuna and Salmon and this is one of the recipes that I use. Sometimes we enjoy the Tuna Salad on a Lettuce leaf and then there is nothing better than a delicious Tuna Salad Sandwich.


Pineapple Shrimp Ka Bobs

We are close enough to the gulf that we are able to get some beautiful gulf coast shrimp. One of the recipes that we enjoy for these delicious shrimp is Pineapple Shrimp Ka Bobs. The combination of the fresh pineapple and the spicy seasons in the marinate make this recipe one of our favorites. We like to grill the Ka Bobs then transfer them to foil packets to keep warm for our guest. This will feed a crowd or a special dinner for two.


Sheet Pan Herbed Tilapia

We live so far inland that we very rarely get fresh seafood, most of it has been frozen. We can sometimes get fresh Tilapia, but it sure doesn't last long in the market. This recipe is quick, easy and has a delicious blend of herbs. This is a perfect weeknight meal or a special company meal, it would be good anytime.


Pan Fried Crappie

We live on one of the best Crappie lakes in the state and lucky for me it is one of my very favorite fresh water fish. Crappie is a very mild white fish that just melts in your mouth. I have a very close friend who is involved in some of the Crappie Tournaments that take place here at our lake as well as surrounding lakes. She recently brought me some beautiful Crappie filet's, and I was so grateful for every bite!


Baked Salmon Cakes with Dill Yogurt Sauce

When I was a young girl, I remember my Mother always had a can of Salmon in her pantry, she said it was for unexpected company. Folks in those days visited each other in person more and they would drop by for an evening meal.  It was a great time of fellowship and relationships were very different then.  My Mother would head for the kitchen, grabbing the can of Salmon she would create the most delicious Salmon Patties.  Just like our social perspective recipes have changed and are somewhat healthier today. I like to look for the balance in all of this, so we invited our friends over for a special week night meal of Baked Salmon Cakes, the food and the fellowship was wonderful!


Seared Scallops In Garlic Pepper Sauce

Any kind of seafood is a real treat for us here at the cottage. We are about 3 to 4 hours from the coast so we don't get a lot of fresh seafood. We usually have our local fish that we catch from the lake or that a good neighbor has caught and given us and that is usually, Catfish, Crappie, Bass or in season Craw Fish. They were having a sale on Scallops at the local market last week so I bought these Scallops to surprise my husband, he just loves Scallops. I seared them in a real special Garlic Pepper Sauce and he wanted more, well next time maybe these were $1.85 each on sale, they were real special! Seafood Casserole

I have been making this Seafood Casserole for years, it is a fabulous casserole to take to a covered dish function, or it makes a great family meal. This is a delicious tasting casserole with wonderful crab and shrimp, although it can be made with lobster if you want to really make it special. My friend was coming to have lunch with me the other day and requested the Seafood Casserole so I decided to share it with all of you as well. Orange Chili Salmon

When we travel to the Northwest coast one of the foods we enjoy the most is Salmon. I just cannot get my fill of Salmon. We are inland here at the cottage and rarely have an opportunity to have really fresh Salmon. The other day our local market had a big promotion for fresh Alaskan Salmon and I was the first in line. My recipe for Orange Chili Salmon is a blend of the Northwest and Texas. We are hoping that our market will carry the fresh Salmon all the time.
